Is there a condition to set Body Type to Current mode in the attach to body step in Headshot? If not, is there a way to set a headshot on a character I created myself ?

If you want to apply the Headshot 2.0 head onto an existing character body, just make sure to load that character first before you start process. If your character is loaded when you start the process then Current will be a selectable option as shown below.

You need to have a CC3+ character loaded. You can't apply a Headshot 2 generated head to a Humanoid character.

Unfortunately no. Humanoid (Non-Standard) characters can't be used with Headshot. Headshot is designed for Standard Characters only.
