I've seen searching and not finding anything, so I'll ask here. If I were to use Buddy's World to make an animation, put it on Youtube, and monetize it, could I be sued by the makers of South Park, for copyright infringement?

If you are using Buddy's World to recreate the characters from South Park then you could receive a copyright claim against you on YouTube.

However if you are using the Buddy's World characters or your own custom characters then you should be fine. All Reallusion content is royalty free for use in video form.
