In CrazyTalk Animator 3, I used to be able to replace a sprite/bone in Composer mode by double clicking on the sprite/bone. As of today that function seems to have disappeared. I am now only able to replace the face. I upgraded to 3.1 yesterday. What am I missing or forgetting to do?

I am also having the same trouble, the sprite won't "stick" when you close the sprite editor in compositor. You can change them on the stage,(like a hand sprite) but if you add a motion the sprite reverts to the default. Also if you save the sprite-changed character as a custom character you lose the change again. I've been having this trouble for a while now, so I don't think it was the recent update.
