This is going to sound tricky, but here is how I would do it.

1) Apply the Walk motion.
2) Open motion editor
3) Walk motion is now "x" number of frames
4) Copy and paste the motion til you are at the frame you want the head to turn
5) Between two of the walk segments and apply "Insert Current Motion"
6) Edit the current motion by turning the head
7) Highlight the turned head and press "Copy Joint" (in top menus)
8) Highlight one of the walk segments that you want the head to turn and say copy joint
9) Now delete the single motion you made.
10) Head will now turn abruptly in that walk motion - but will be jerky
11) Move the two walk motions apart, so that the head turning will not be so abrupt
12) Down side of this is the walk will slow down
13) This is the simple explanation. To fine tune it, you would really need to break a walk motion segment into 3 or 4 sections, do an insert pose between each break and adjust the head just a little in each break - a lot of trial and error til you get it right.

Now, I'm no expert, so if anyone else here knows a better way - I'm all ears.
